At Barony Country Foods we operate a small, traditional smokehouse. Using this age old process combined with our own unique recipes and methods we produce delicious smoked salmon, trout, game and poultry.
Our renowned smoked salmon is cured with sea salt and demerara sugar, gently smoked over native oak chips and then after a few days of maturation, sliced using nothing more mechanical than a sharp knife and a steady hand!
