During the summer months of June, July and August we buy wild salmon and seatrout from fishermen on the Solway Firth. The seatrout run starts first, usually in June with salmon following in July and August.
Numbers of fish are very unpredictable and are affected by tide, weather conditions etc.
These superb fish are caught by the traditional method of "haaf netting", an ancient practice carried out on the Solway Firth since the time of Robert the Bruce.Fish caught by this method in the estuary are absolutely magnificent, strong, firm and like bars of silver.
Every year we keep back a portion of this wild harvest and smoke them lightly over oak chips to create the ultimate smoked salmon..
