Only the finest and freshest Atlantic salmon meet the exacting standards demanded by Barony Country Foods.That is why we only buy our salmon from farms whose policies include low stocking densities, high standards of animal welfare and minimal artificial inputs.
Our salmon are available fresh or smoked using our own unique method, cured with salt and demerara sugar then gently smoked over native oak chips to give a rich, full flavour with a moist and delicate texture. Simply delicious!
All our trout are reared, only a stones throw
away, at the Barony College's Carse of Ae trout
farm.Here a blend of traditional and "state of the art"
husbandry techniques combined with the pure
and fast flowing water of the river Ae create the
firm textured and flavoursome trout we have
become renowned for.
Available fresh, smoked in a similar fashion to
our salmon or hot smoked to give a drier product
with a more open texture.
Either way - the prince of fish fit for a king!
