Traditional Scottish Smokehouse
At Barony Country Foods we operate a small, traditional smokehouse. Using this age old process combined with our own unique recipes and methods we produce delicious smoked salmon, trout, game and poultry.
For that special dinner party, our luxurious oak smoked Scottish salmon is a real treat, or for an unusual starter why not try smoked duck or goose breast.
Our renowned smoked salmon is cured with sea salt and gently smoked over native oak chips to give a rich, full flavour with a moist and delicate texture, then after a few days of maturation, sliced using nothing more sophisticated than a sharp knife and a steady hand.

The salmon is cured with sea salt and demerara sugar and then gently smoked over slowly smouldering native oak chips.
Carefully Removed From the Kiln After Smoking
The smoked salmon is removed, refrigerated and prepared after a few days maturation.
